1) Will environment objects (crates, barrels, loose rocks?) be able to be utilized as impromptu weapons on enemies during combat? I saw them trying to do this in the Kickstarter finale stream but it didn't seem to be working.

2a) Can objects be used as barricades? Can I block off a doorway by cramming a crate into it?

2b) Will enemies have a chance to fight back by spending a turn or two destroying a blockade/can they destroy container props the way players can?

1) Probably; that could be done in Divine Divinity (with broken barrels doing more damage than intact ones).

2) yes / don't know

2a) Yes, they said so during the finale live-stream.
2b) Maybe? It depends on many things.
