I open this post to discuss all the possible animal companions that the Beastmaster could get when we get the full game.

One of the things I would like would be for only certain races to have access to certain beasts, such as Drow Worshipers of Loth having access to multiple types of Spiders or Tieflings having access to Beasts of Avernus.

I want Scratch as an animal companion and Shovel as a familiar.

Being able to pick up an animal or familiar with personality during gameplay is exactly the kind of thing people want. I hope Larian does this. It would make fans very happy.

If not changed I plan on asking a mod maker(any out there feel free please) to convert the scroll that summons Shovel to a once per long rest item charge maybe on a ring? Are wands a thing anymore in 5e?

Shovel should absolutely last longer than a single day as it is implemented. While speaking with it, it mentions it's previous owner "never summoned me for anything fun". I think those are it's exact words. This implies that Shovel was repeatedly summoned by it's previous master and that isn't possible if it is being summoned with a once per use scroll item.
