At the moment in EA dialogue tags (such as Baldurian and Underdark) depend on your race and are a bit inconsistent (half-elves especially). Hopefully on launch these are tighter and there is some more variety. It's also my hope that we can select this option at character creation. That would help keep dialogue tags consistent and avoid a misclick locking a character into a tag a player doesn't want.

being from Elturel would have crazy unique dialogue options

It would give you something to talk about with Zevlor and the tieflings.

I'd like Elturel too, to replicate TT character. But I'm guessing Larian's probably made it Baldurian for hard-coded story reasons.

unless your a dark elf or gnome i think then its the underdark.

Wich is exactly the reason why that option will most likely NOT be there.

And Githyanki are from Astral Plane.

Im not sure, i think i heared somewhere that its presumed (or that there are some signs?) but nobody knows for sure, since their history was lost in time.

Githyanki aren't so much human hybrids I believe. They were another sort of humanoid creature once, though I don't think they were actually human. But the Mindflayers altered them so much that they effectively became something entirely different, the creatures we see today.

well maybe well get some history upon the release?

I'd hope so. I learned about their history via an actual play and they're actually really cool and impressive! I really hope that they implement Githzerai into the game as well since I actually like them more, having learned about them.

Back to the tags though, I think an issue we're running into is that as players, we don't know and I think a lot of us assume that having the Baldurian tag or the Underdark tag or whatever Githyanki have means that as far as the game is concerned, it's canon that we're from those places. After all, we're still a ranger or a fighter no matter if we choose dialogues marked with those tags. Same with racially tagged options.
