I bought the Early Access back when it launched a few years ago. I read that it will upgrade to the Digital Deluxe edition and saw something about 72 hours early access. I'm a bit confused and was hoping someone could clear up what this means.

Scenario 1: I can keep playing EA right now if I want and then on August 31 Steam will upgrade the game and my saves will clear and I will be playing the launch version?

Scenario 2: 72 hours before August 31 (August 28) Steam will upgrade the game and my saves will clear and I can play the launch version of Act 1?

Scenario 3: My saves delete on August 31 and I turn into a piece of cheese.

You don’t have to! If you own Baldur’s Gate 3 on PC/Mac or are planning to purchase it on Early Access before launch, you will get a free upgrade to the Digital Deluxe Edition! Since This edition includes 72h of early access, this means you will get access to the Digital Deluxe Edition content on August 28th!

How does the 72h early access to Act 1 work?

No. Due to the amount of updates and changes expected during the Early Access stage and at launch, saves made during Early Access will not be compatible with the full version of the game when it releases.
If by "clear" you mean that you'll have to start over, yes, you'll have to start over. I don't think the saves will be erased from your hard drive. They'll just become incompatible and unusable. Possibly, you will be able to see them in the game (and, e.g., remember the names of your EA characters), but they won't load.

In EA you can continue to play on an old patch after a new patch is released.
So I don't know why you would want to miss the cool stuff, but come 28th I suppose you could decline to update your game.

And my preference will be to uninstall the game, before installing on the 28th.
