The option to "Jump" which was previously one of several on offer on-screen has suddenly vanished, with the result that I cannot jump. The keybound Jump command (bound to 'Z') does literally nothing.

suddenly vanished = you clicked on the icon and dragged it off the ui i assume?

open your character sheet and the jump icon can be dragged back onto your ui

if that doesn't work then make a save game , shut down your system i.e, the Mac and reboot it... this will reset your Vram which may be locked up doing something else

Thank you for that! I will try your first suggestion when I next log on. But it seems to be a strange design decision; why would you even want to deliberately drag an icon off? There should t the very least be an option to lock the icons in place!

why = because Larian made this UI for a different game and likes to cut out testing to save on dev time
you will have a hard time finding it so here is a guide to the 4 + steps needed


the character sheet is N by default and will only work on main characters until you get of the first ship

then you open the spell book
then you open common spells which are hidden by default
then you drag the jump icon back onto your action bar... note pressing Z is NOT the key for jump but for whatever spell happens to be put in this first action bar slot

and finally there is a small hidden lock to stop you removing spells by mistake

Wow! That is... more than a little insane of Larian (you'd think they are making enough money from the overpriced prelaunch sales!). And absolutely brilliant of you to have worked this out.
