Just curious, as this was somewhat of a thing back in BG2, and I haven't played EA too much to remain spoiler-free, but I'm just too curious:
Do companions also form any kind of relationships (not necessarily romantic, but why not) between each other, and if so, can the player influence those?

Maybe? I don't think we had an official word on it.

People claim to have seen Lae'zel making merry with either Wyll or Astarion during the party if none of them are romanced, but I personally never saw it.

Gale kind of flitrs with Shadowheart, but it doesn't really lead to anything, so who knows?

Apart from that I didn't see much of any platonic relationships forming, could be EA didn't have it or it was too early for it.

Not gonna lie, would be kind of nice, I fondly remember Minsc adopting Aerie as his new witch and Keldorn mentoring Anomen.

I am 100% sure that Lae'zel f3cked Gale in one of the earlier iterations of the EA. Not sure about now though.

In EA, Lae'Zel will have a shag with either Astarion or Wyll after the Goblin/Grove resolution if you aren't having a relationship with any of them.
