Dragon Age Origins showed shields on characters' backs 15 years ago. I think it's a reasonable request.
Also Quivers are missing for bows. Shouldn't be that difficult for a game with BG3's budget.
One handed weapons should go on your belt and heavy two handed weapons could just stay in your hand most of the time, save for climbing etc. I find myself constantly drawing weapons while exploring in BG3 so they don't mysteriously vanish or look silly. It would be great to see Bow + Quiver on your back while holding a Glaive. Putting the Glaive on your back while using Bow would be understandable though. Glaive + Quiver I mean. =)
Special mention to Short Sword + Dagger combo where sword goes on your back and dagger on your belt for a really weird draw.
Wizards look great when you carry a staff in your hand instead of back. I wish that was default.
While we're on the topic of displaying both equipped weapons - please remove the arbitrary restriction of having only melee + ranged weapons equipped. Some of my characters want two melee slots. They have no Dex and blunt damage is certainly a thing in BG3. Some want melee + Javelins, which should also be visible on your back. Why are bows forced like this? And why only two equip slots? BG1&2 had more for martial classes. Quick Draw feats could exist to give you more.
