I'll be running the following three multiclasses and I thought I'd share.
BarFighter: Barbarian 4/Fighter 8
Race can be anything, but there will be some crit fishing here so Half-orc is an optimal choice
Str: 17 (Use Hag hair for +1)
Dex: 16
Con: 14
Int: 8
Wis: 10
Cha: 8
Level 1 = Barbarian
2- Fighter (1)(Take 2 weapon Fighting)
3- Fighter (2)(Action Surge)
4- Fighter (3)(Champion here)
5- Fighter (4)(Take Dual wielder feat instead of ASI)
6- Fighter (5)(Because you don't want to get second attack any later than you must
7,8,9 = Barbarian I'll be picking Wildheart (Bear) but you can pick your favorite. Also my Barbarian (4) ASI is Martial Adept and pick Riposte and either disarm or pushing attack as you prefer
10 -Fighter (6) You get another ASI here and you can finally have str =20 if you like
11 -Fighter (7)
12 -Fighter (8) and another ASI forDex to 18, of if you've found Dex gloves/belt you can push Con to 16
*You can actually swap Con and Dex around if you think you're going to focus on unarmored defense and want to max Dex, or think you'll find some decent medium armor and want more HP.

Summer Knight: ArchFey Warlock 4 / Valor Bard 8
Race can be any but High or Wood Elf give good flavor as you are the chosen champion for the queen or lady of summer
STR: 10
Dex: 16
Con: 10
Int: 9 (This will go to 8 after Volo's eye and stay -1)
Wis: 12
Cha: 17 (Use Volo's Eye for +1)
Level 1 = Bard Best way to prepare your skill base and bard is a bit easier through the nautiloid
2 = warlock (1) because you want eldritch blast
3- warlock (2) because you want agonizing blast.. you should also pick Devil's site which will become clear later. Eldritch will be your mainstay for a bit
4- Back to Bard (2)
5 -Bard (3) - Valor here, this is preferred over sword because you want martial weapons
6 -Bard (4) and ASI for 20 Charisma
7 -Bard (5)
8 -Bard (6) You get second attack here and your build is about to come online
9 -Warlock (3) Pact of the Blade and you want a 2 handed or heavy weapon as your choice. If everything works you'll be using Cha as your attack stat
10 -Warlock (4) for the Great weapon master feat and you're online. You charisma counter's the -5 to attack
11 & 12 are bard
This is a striker build. A great strategy is to run into your enemies and drop down a darkness, you'll have multiple swings a turn with a minimum of +10 damage each (plus Cha if pact of the blade works right) and when you crit or kill it's a free attack as a bonus action.

Spymaster The King of ALL trades: Assassin 3 / Knowledge Cleric 1 / Lore Bard 8
Combat is not really your thing, assassin makes you 'ok' at it if you get the drop on your opponent but you aren't winning the DPR race. No, your thing is EVERYTHING else.
Race is probably one of the elves (high, wood, drow) as it's the primary source for perception and if you go wood elf you get + longbow and stealth too
Str: 10
Dex: 14
Con: 10
Int: 13 (Volo's eye will drop this to 12 and remain +1 to skill checks)
Wis: 12
Cha: 17 (use Volo's eye for 18)
You collect skills like a vault dweller picks up bottle caps
If you start wood elf entertainer you get:
Stealth
Perception
Acrobatics
Performance
Level 1 = Bard for the skills (Persuasion, Insight, Deception I've found to be most useful so far)
2- Knowledge Cleric (1) (as a superior skilled feat + Guidance) Pick up expertise in History and Religion
3- Rogue (1) +1 skill (Investigation + expertise in Persuasion & Perception)
4 -Bard (2) for Jack of all trades ability
5 -Bard (3) for college of Lore (This gives you Arcana, Intimidation, and sleight of hand + Another 2 expertise (Deception & Sleight of Hand)
***I noticed an issue with selection order in that you chose your expertise before you got your lore skills meaning if you waited on sleight of hand until your lore subclass you may not be able to get expertise with it.... if the live version is the same there is a chance you'll need to get sleight of hand earlier in your choices in order to pick it as expertise.. this essentially wastes one skill pick since you'd pick SoH once and then 'get' SoH again when you went lore
6- Bard (4) for ASI for 20 Charisma
7- Rogue (2)
8- Rogue (3) for assassinate
9- Bard (5)
10- Bard (6) Magical secrets here, pick 2 spells you are missing (flaming sphere is good, fireball, lightning bolt or call lightning if this is the only caster also good)
11- Bard (7)
12- Bard (8) Another ASI and you can Get Dex to 16 here unless you've found gloves or belt. if so feel free to get a feat like sharpshooter or skilled
If you lost count that ends you up with (provided you picked the same as I and sleight of hand doesn't waste a skill):
Stealth
Perception + Expertise
Acrobatics
Performance
Persuasion + Expertise
Insight
Deception +Expertise
History + Expertise
Religion +Expertise
Sleight of Hand +Expertise
Intimidation
Arcana
Investigation
According to my list this means you're only missing:
Nature, Animal Handling, Medicine, and Survival - But with Jack of all trades you have half proficiencies here or if you took the "Skilled" feat you could pick 3 of these and just be missing 1.
On my first play through I'll probably be turning Karlach into the BarFighter and running the spymaster myself... I also like to play the Sorcadin, but that may wait until my second play through.
