When I trade I can no longer split items that a trader has, to buy 1 instead of them all, it was working fine then suddenly when I try to split them all I get is an examine pop-up.

This is a serious bug as I cannot afford to buy a full stack of most items

I had this problem earlier, but can't now replicate it and am able to choose how many items to buy in both the Trade and Barter views.

If you have a save from which you can reliably repeat the problem, this seems definitely worth reporting to Larian. You can use the "report a bug" function on the Larian launcher as a shortcut to the relevant part of their website.

As far as I can tell, though I have also restarted the game since noticing the problem. I didn't stop to play around with it very much, but iirc when I first tried to trade with Arron in the grove when using the Trade view. I think I then bought some dye from Mattis and used the Barter view, and didn't have the problem.

I don't think I've probably tried to purchase a stackable item since, until I checked just now with Arron again and it seemed fine, prompting me to select the quantity in both the Trade and Barter views. There's clearly something buggy here, but in advance of a proper fix I'll hope the issue resolves itself for you too!
