i understand them reacting strongly to undead, but why are running into the shadow curse getting themselves killed, whilst trying to gently shoo away a fungal zombie like it's a pigeon that flew into a super market.

Not just undead summons, but many other summons as well, like e.g. elementals. It's quite idiotic, to be frank.
