So if I have Karlech turn into a mind flayer and side with Orpheus, is there no option for me to ask Lae'zel if I can come with her?

I was able to get her to agree to not go with him, but it feels mean to ask her to give up her entire life's goal. Obviously if I was a mind flayer it makes sense for this to be impossible, but Orpheus would presumably be able to tell the rest of the Gith'yanki that I'm cool. I feel like riding off into the stars with Lae'zel would be the perfect ending with her, so it's a little disappointing it's seemingly not an option.

No, because Lae’zel is the biggest Mary Sue ever existing in CRPG history, and after she happily allowed Orpheus or Tav make the ultimate sacrifice, something she didn’t even entertain to make despite all her ranting about freeing Orpheus and fighting for freedom, she lives her dreams and rides away in the sunset on a dragon to become the biggest githyanki hero ever, with the explicit blessing of Orpheus. Her continued existence is obviously more important for the githyanki people than Orpheus’.
Mary Sues like this have no time or space in their life for looser love interests like sidekick Tav. That is not nearly heroic or dramatic enough. Leaving romanced Tav behind is more in line with the dramatic flavour in this case.

But rumour has it, if you romanced her as a githyanki she might take pity on you and allow you to tag along…

My thoughts were that there's only really two good endings. The ones where Orpheus is alive and Lae'Zel stays or Orpheus is dead and you go with Lae'zel.

Orpheus is likely going off to die against his fight against Vlaakith, as she has a canon death in 4e. Although I don't really know if that's canon in 5e the more I read into it. But anyone that goes to fight Vlaakith at the end is likely going to their deaths. I wouldn't really say Lae'zel is a "Mary Sue" because she carries the word of Orpheus. There's legitimate complaints with how the Gith story plays out but that ain't it.
