Karlach. 50% physical DR during rage, if you make her bear wildheart barbarian it's 50% DR to all damage except psychic while raging plus a once per short rest heal slightly better than second wind. Karlach also has innate fire resistance and through her companion quest gains immunity to charm effects. Barbs also have the highest health pool scaling. If you grab the tough feat on top she'll probably be sitting at 150+ hp after Aid from Shadowheart. She'll also have a metric ton of carry capacity, likely well over two of your other teammates combined.

I wondered whether Minsc might become a really valid tank, as he gets so many Resistances, with the mace from Shadowheart's quest giving him 18 strength and the gauntlets giving 18 agility you can focus on constitution completely. Add that +2 con heavy armour and the grymforge helmet as well as a shield and he will be quite formidable without the need of buffs in need to be retained on him. But in the end this holds true for all characters I suppose.
