Isn't it weird that NOT talking with Isobel is a better choice all around?
I know some people just love to fight any battle, but story-wise we avoid:
1. The battle which even if successful (Isobel is not kidnapped) can result to the death of some characters around the Inn.
2. Mol being kidnapped.

Do not talk to her and you are good, the end result is the same if you choose to free aasimar (maybe it's even the same if you kill her, I haven't tried), so why bother?

I never talk to her, I come into shadow lands from the hill by the creche so get the lantern by killing the goblins before even calling the drider, play Minthara's spider lyre, tell him I killed em all in service of the absolute (which he loves - weirdo), then kill him, free the pixie and get my entire party and all subsequent parties fully barricaded against shadow lands curse that way. Game knows whats happened so I never even get told to speak to her by Jaheira and I avoid going upstairs at all in case I end up inadvertently doing so. Result no fight, no risk of the barrier collapse and no issues with having to free Isobel from Ketherick. I found out about this on my second playthrough - although on my first I managed - more by luck than judgement - to prevent her being kidnapped but some people got killed when they didn't need to be

You raise a good point, and I would add that it's a little silly to begin with that letting her get taken has such massive consequences: the death of everyone at Last Light (probably even Jaheira) and nobody to help you at Moonrise Towers. And let's face it, if you struggled in the Isobel fight you're going to need that backup at Moonrise. Talk about kicking the player when they're down.

Unfortunately I think it's a little late for them to be redesigning how the story unfolds. All of this is unlikely to change.

For some xp, and I beat marcus so fast that the demon have no chance killing everybody else?

I always looking forward to kill the Fist traitor so for me personally, why wouldn't I do it? Mol getting kidnapped? too bad.

This is not to say that Isobal encounter isn't weird, it's definitely is. Same like the other guy I skipped meeting her and went right into ambushing karniss.

I think whether you like it or not perhaps Larian would predict that we could skip it (since it's easy to went that route), and make Mol and Isobel automatically kidnapped.

On my first play-through I've killed Marcus quickly enough (though I had to reload once, bad rolls the first time and he kidnapped Isobel on the first hit) but those "demons" he summoned managed to kill somebody from the Inn on the first floor before I had a chance to get rid of them.

Can the fight be cheesed by casting Sanctuary on Isobel or something similar that would sabotage the enemies focusing her?

Yes you can use Sanctuary but Isobel will eventually attack and break the spell. You can also cast heal on her to stop her HP falling to zero which makes her go unconscious which in turn makes the kidnapping trigger.

My gripe with Isobel is mostly about

not being able to mention to her “soooo, you’re ketheric’s daughter, then… cool. Cool cool cool.” at any point despite it sounding quite shocking news to me. Also I never figured out how she died and it seemed this tidbit of story would be quite sus.

The tweaks in the fixes released made the battle part much more manageable.

You can also throw an invisibility potion at her and she will go invis and be untargetable by enemies until she attacks.
