I have a number of items that I picked up that never show up as sellable:

Salt
Pepper
Rope
The knife set from that doctor
Magic Carpet
Cart Wheel

Do I need any of these items? Can I ever sell them? Do any of them do anything?

just dispose of them - to the extent they were required for quests (e.g. the wheel), of course only after completing the quest.

The only 4 ropes you need in the game (for the easter egg area) are located where you need them.
