Why is there no option to say Tav would like to go with him on his new venture? My Tav only romanced him, so maybe she'd be willing to pack up and head out.

First, I dispute that Karlach is heartless. Her infernal engine functions as her heart. Without that, she'd be dead. So it's still a heart, however artificial. That said, my Tav has a pocket full of soul coins. because I don't generally use them on Karlach. So, why can't I just buy out his contract from Mizora? Wyll is free and she can pocket some profit and go find a more agreeable pet.

Unfortunately, these are questions that can't be answered without further information, either from the game or the writers. Many folks have mentioned the Halsin thing in other threads. Apparently a similar thing happens with Shadowheart (who has the same writer) if you resolve her quest a particular way. I have no idea why the writer would decide to end things like that (and only for one of Shadowheart's endings!).
There's no indication that the other thing would work. Mizora shows no interest. There's no way to bring up the subject. The game just doesn't acknowledge such a possibility at all. Again, we'd just have to speculate.
Mizora's basically portayed as an evil lawyer type. Because it's not an actual heart, it does not count as one for the clause. Law is brutal like that. She won't be letting him off on a technicality here, however you do get that opportunity later with the rescue mission. Whether or not Mizora would be up for a buyout is a different story and would be a fun way to give secondary use to the Soul Coins other than simply selling them, but it would also take away from Wyll's character development.

Same. I'm glad that Karlach fans got a companion they liked but I'm not one of them. Karlach's attitude towards soul coins is pretty heartless and disagreeing with her - she brings up twice - results in a big reduction in approval with her. I end up having better relations with the lawful evil Gith warrior and the chaotic evil thief.
Unless the souls in the soul coin can be freed, I think using their soul to move forward is still the better option than just leaving them to "waste", granted I haven't used them either. But anyways I think your PoV is wrong.

If Larian is going to change the lore I won't argue but in the existing lore using a soul coin in an infernal engine doesn't allow it to move on - it destroys it and the soul experience terrible agony and dies screaming. And we know that one of the coins we get from the moonrise bugbear is that of an innocent child.

Not going to claim I know Actual DnD lore, because I know nothing. Just what I know in BG3, so but either way unless there's a way to free the soul, best respect to that soul is to use it. We could argue the mortality of it all day and night but...

In the structure of Descent into Avernus freeing the soul is the good decision but it's nearly impossible to be consistently good in that module because you will need to drive an infernal machine somewhere.
