Type "--skip-launcher" in your launch options.
Right click on the game in steam
Go to Properties
Scroll to the bottom
For me, that command made the launcher window not pop up when I started BG3 - but the launcher still must've been active in the background at some level, because it kept showing up in my Windows Reliability Report as crashing. Also seemed to freeze/BSoD my whole PC.
The option that *really* got rid of the launcher for me is this one:

^ You'll obviously need to adjust the path to match your installation's path.
After I'd used that one instead of the "skip" command-line, the launcher never showed up again in the Reliability Report and my PC became more stable - until other apps started to crash it, but that's another matter...

This is what it looked like before:

Come to think of it, perhaps that stupid MS Teams Updater was more to blame here (I've since uninstalled MS Teams). It was one of the apps that kept crashing /crashing the PC even after I had disabled the launcher. In any case: There were other days where the Launcher popped up a lot more in that list... I think it basically crashed every time I started the game after the BG3 August ...err 26th patch.
