the companion ai is this game for where it walks is infuriating. CONSTANTLY walking infront of my mouse cursor while im trying to click things and loot stuff.

I recommend clicking "G" if you're on PC, which will simply make them stay put. It makes looting much more convenient that way.

Not sure how to unlink the party on console.

I use a PS4 controller and hook it up to my PC. I don’t typically have the issue of my companions getting in my way. Maybe it could help to use a controller instead of the keyboard.
