I'm not sure if this is a bug report or not, so for now it's in story mode.

I'm playing a cleric of Vlaakith, trying to go full gith motivation and not care about the grove, the goblins, or any of that. Just want to go straight to the Creche. I go to the mountain pass, and discover that at level 4 the undead warden fight at the start of the pass is unbeatable for me. Even fighting the lady who wants the githyanki egg saw one of my party members felled before they could make a move. I decide to level up a bit more, and also out of curiosity go back and see what happens when you skip helping the grove. It is, predictably, full of thorns. I was curious to see if the gobling camp had cleared out but pretty much everyone is there. I went and talked to Minthara and gave her the location of the grove, telling her it's covered in vines. She says something to the effect of "That won't stop us. Now move out and get ready to attack." I was interested, because I would love to see what happens. I go back to the grove and... nothing. She never shows up. I go and talk to Dror Razlin and Gut to see if it changes anything - nothing. Minthara just seems to be gone, with Razlin expecting me to help her. No quest notes, or anything.

Is this a bug? Is there supposed to be an assault on the grove after the rite of thorns? How is this 'supposed' to resolve? Will I ever see Minthy again?

I believe once leaving the grove - goblin areas those quests end, so if no assault happened; the tieflings are pushed out, the rite of thorns takes place, and Minthara goes to Moonrise Towers to report on her failure. If you go back and talk to people, namely the goblins, no one really acknowledges this as far as I can tell.

No assault actively takes place without your involvementm I don't think. Though I haven't really tested those variations much

But that's not what happens apparently. Read my post again. Minthara is still at the camp, and you can still tell her the location of the grove (and even mentions it's covered in thorns). She says she's gonna go attack it anyway, and then... nothing.

Its a Bug
she is supposed to Go there and yu go there after
She will be pissed off in front of the Closed Grove
and she will atack yu ASap becouse yu Betray her.

the Correct way is to Chose a Side in the Grove Quest if yu dont want to Waste 2 Companions..
or Deal with Kagha First its the Secret for the Grove to Not Get Closed..
(just Look at her locked stach the letter and find her Secrect.. its behind the Wall in the Roon next to where she stays standing..)
and yu are good to Go to Rosymon after i Beleave..

(the Assault of the Grove is with yu Chose to Side with Goblins, Never Go to Rosymon Before Choosing a Side.. or yu will Lose Minthara and Halsing.)
i advice to Side with Minthara.. I never Like Halsing as companion.. yu can Have a Better Druid in the end of act 2

thats something i Really Hate in this Game all Leazel Quests if yu Follow what she wants yu will be locked out of a Bunch of Cool stuff in the Game..
Never Follow what she want, always left to do her stuff for Last.. Always.

You have to take a long rest after telling Minthara where the grove is. Then, after your long rest, go to the grove and Minthara will be there.

Thank you for an actual answer. Do you happen to know what will happen if I got back a few saves and don't inform her of anything? Will I run into her at moonrise later (I assume as a corpse, since this game is determined to not let you have minthara and wyll/karlach at the same time)?

If you kill her OR EVEN non-lethal KO her, she vanishes from the game completely.
