You're probably using a debug profile. BG3 will automatically create one and start using it sometimes when something "goes wrong" with your game, like a missing or outdated mod or modsettings file, or when you try to open a second instance of the game while it's already running. Check your larian folder in your %appdata% - you'll have a path like <your name>/AppData/Local/Larian Studios/Baldur's Gate 3/PlayerProfiles. In there should be a "Default" folder with your keybinds/options settings and saved games. If you ALSO have a folder like "Debug_Client_Profile_1" then you're using the debug profile. Just move the Debug_Client_Profile_1 to your desktop or something (don't delete it until you're SURE your saves aren't in it somehow,) make sure all your mods are up-to-date for your game version, and then try relaunching. If your settings are fixed and saves are back, you're done, and you can delete the Debug_Client_Profile_1 that you moved. If the game recreates the Debug_Client_Profile_1 in your appdata folder, then something's wrong with one of the files in your Default profile. At the very least, you should be able to copy the Savegames folder from the Default folder, even if your mods are broken or your settings files corrupted or something. Unfortunately for the other poster, I have no idea if this happens on console or what to do about it in that case.
