This is a bug in the game. Whenever I start up the game on Xbox Series X, the game resets my options. It's like on a fresh install and you start the game up for the first time. It seems to keep on erasing my settings and options.
I use the Imperial System so instead of the game using the measuring system of Feet for movement and Pounds for weight, it keeps on switching over to the metric system of using meters for movement and I'm guessing Kilograms for how much weight you are carrying in game.
This has started happening every time I start up the game and it affects all my saves for the 3 different characters I have for the game since I am doing multiple playthroughs to see various changes based on choices I make in the game itself.
This is a major bug that needs to be fixed soon.
