So I was talking with my coworker, who also plays, and our conversation turned to the unique dialogue options or interactions with NPCs for different races. The Githyanki seem to have the most, and I have really loved the differences I've noticed with it and it really helps immersion. Drow have a bunch too, as do Tieflings (though its mostly racist...) I would really like to see more unique interactions for the other races, but particularly for Dragonborn. I really doubt too many people have seen those just walking around, as even running into Dragonborn NPCs seems rare in act 1 and 2, not to mention they're flippin huge. You'd think people would have commentary on that.

I mean it takes place in Faerun, Dragonborns aren't the weirdest thing out there in Faerun when we have literal Khajiits, Bird People, Ninja Tortles, Aasimars, Genasi (one of each 4 elements) and Bald Half Giants called Goliaths.

Also don't get me started on the British Space Hippos with Blunderbusses,

Considering that unique interaction basically means "one race specific line that replaces a skill check" having more of them doesn't really matter. Larian would need to increase the quality and effect of the race first, but we all know they won't do that.
As for the reason Dragonborn (and Half-Orcs) are absent in the first 2 acts, they finished them late in development and didn't go back to change existing content to add them, so Larian just dumped them all into the content they were working on, meaning Act 3.

I don't mean just the unique dialogue options that your character can do though. When I play my Githyanki character so many people in the grove responded to that, usually just little things like not knowing what the hell I was. I remember Guex (The Tiefling trying to practice sword fighting) even completely stumbled on his words when he looked up at me and then apologized for it because he had no clue what the hell I was. I just thought it was funny. Not to mention Lae'Zel and Shadowheart responded entirely differently to me too. People respond to my Drow character a lot too, because they dont see them much and are wary of them. Playing my Dragonborn I figured there would be SOME comments, but... nothing. I just cant imagine they see any more Dragonborn than they do Drow. My interaction with Volo went a little different, especially when he got to his 'what kind of dragon was marching at the back' question and then seemed to realize what he was talking to. But that's been it. Its just those little details and tweaks in interactions I find immersive and fun to explore in subsequent playthroughs and when its missing it makes me sad XD

BG3 simply would had done with another half year of development.
Look at the state of the game today, half a year after release.
Dragonborn were shoehorned at the last moment and it shows - has a Dragonborn Guardian been added by any patch yet?

In act 2 and 3 racial interactions and dialogs are almost non existent for underdark races and for Gith. Very disappointing.
Never tested dragonborn.
