BG3 is based on a Dungeons and Dragons ruleset. During combat, enemies and companions all roll for initiative, roll for saves, roll for attack. If the dice in dialogue were removed, I'm not sure it would be staying true to D&D, and would just feel like an RPG.
Personally, I really enjoy the dice rolls. I love the unpredictability and pure chaos of a failed roll, or getting a Nat 20 at the perfect time. Sometimes the dialogue checks directly affect whether or not you enter combat at all. Sometimes the dialogue rolls directly affect companion approvals or even whether a character lives or dies. I think if everything always went exactly as planned, that takes the challenge and fun out of the game for me. If they removed the dice, after a few playthroughs, I would stop reading the dialogue, because the outcome would always be the same.
