I really love that a Cleric multiclassing into a Paladin also makes the character a Paladin of the chosen god/goddess.

It's such a small yet fantastic detail that wonderfully drives forward the religious roleplay of being a goddess's chosen priestess and channeling Her divine power.

I do love this feature, but unfortunately it’s hard for me to fit into any character when there are only 12 levels available. (Cleric/paladin levels along with anything else I want to do.)

Huh.

That's great. While I really like 5e I never liked the change from holy warriors to oath keepers. Now it seems I can play a paladin the way the gods intended.

This seems like a good option for those that can't or don't want to mod their game. I personally use a mod that makes the already existing paladin deity tags visible. They do seem to only refer to Good or Evil gods and make no reference to each particular deity afaik. Oathbreaking works just as usual.

I always found so confusing that there's dialog in game in which Gale says that as a paladin you have received your power from your god but you didn't actually pick one when you create your character.

If I want to do this, how many cleric levels should I get before switching to paladin? I'm inexperienced with multi-classing in BG3.

One level into Cleric is enough if you are just going for roleplay.

Dipping into a level of cleric is my intention for religious paladins, but I confess I thought the paladin-specific lines were just leftovers from an abandoned earlier plan to let paladins choose deities (which would have been great). I’m not sure they’re there consistently through the game … though I’m not sure they’re not either. I did complete the game with a cleric of Oghma/ancients paladin character but clearly wasn’t paying enough attention! But even if there aren’t paladin-specific options, I found the cleric ones good enough to give the right flavour to my character.

If doing this, it can be better to take paladin level first to pick up armour/weapon proficiencies. I’m not sure how BG3 manages these for multiclassing, as you do seem to get quite a few proficiencies from new classes, but I’ve just checked and a nature cleric > ancients paladin doesn’t get heavy armour proficiency whereas other way round they do. Though taking a level of paladin second does give martial weapons proficiencies, so if choosing a domain that gives heavy armour you might be okay.

Correction - Life, Nature, Tempest and War Clerics all get Heavy Armour, and this is regardless whether you start with them or not, as this Proficiency is a Sub-Class feature. In same manner you can multiclass into Ranger and get Heavy Armour through one of the Favoured Enemy traits.
So - one of those four Domains -> Paladin you get HA, other Domains -> Paladin you do not.

As to how many levels of Cleric before switch to Paladin - I'd say one.
