I've just finished my third full playthrough, so I want to share some ideas I had and give some priceless criticism. I will not share my thoughts on the lore here, as I've done it in other places.
Careful, DU spoilers ahead.
1. First of all, I think multiclassing can go a bit too far in this gane. Just imagine a cleric of Lolth making a pact with a devil, and then right after that becoming a paladin of Tyr. And they're simultaneously a descendant of dragons and a Bhaalspawn. I know this is a game, and these are utility things to make our experience better, but what is possible right now is a bit much. What I would suggest is to have a class you chose at the game start be your primary class which you can't change, and having only it provide specific dialogue options. Withers being able to remove your pact and oath and unclericify you should only be possible in custom gamemode, if possible at all. Same goes for other companions by the way, being able to un-warlock Wyll so he gets no warlock powers but still owes his soul to Mizora is too immersive-breaking in my opinion.
2. Speaking about DU, it has really big class problems too. The entire plot is that you remember nothing about your past, yet you do remember you are a cleric of Selune, for example. Well, one could argue that specifically is fine, but DU is still evil personified, so them having a fey patron or being a non-vengeance paladin doesn't make sense either. So my suggestion here would be to create sort of a Bhaalist subclass. It would be a fixed subclass for warlock, sorcerer and possibly paladin, although vengeance works too, and a fixed deity and domain for cleric. Said subclass would have some normal spells for the appropriate classes, and some unique spells which are only used by Bane and Bhaal cultists right now. And then the description for this warlock subclass would be something along the lines of " You vaguely remember having a powerful patron, but have no idea who or what exactly that is. Despite that, your patron grants you terrific powers, and also seems eager to see what carnage you can unleash with them..." Same could work for other classes I mentioned, adding awesome correlation between story and gameplay, which is something BG3 lacks, unfortunate as it may be. Of course, these dark powers would expand with more dark decisions, while the description of subclasses would change upon uncovering more about DU's past, and if the player chooses to defy Bhaal, this subclass and all of it's spells would disappear and the player would be able to choose a normal subclass/domain/oath.
3. Warlock. I have done a playthrough as a Fiend warlock, and while I was delighted to see a plethora of warlock dialogue options, the lack of Fiend dialogue options as well as the lack of any interaction with the patron itself was disappointing. Archfey patron doesn't have that much places where it could come up, but Fiend warlock absolutely should have unique dialogues with Raphael, and GOO, well, the theme of the whole game is mindflayer stuff, that should be GOO warlock's place to shine. Maybe the patron of GOO warlock is a longtime friend of the Absolute - who knows? Seriously though, I see a ton of missed opportunities here, and I really hope the expanded modding tools that Larian promised will allow modders to implement some of these things.

I just want to point out that despite their aesthetic similarities, mindflayers and great old ones don't Actually have all that much to do with each other in lore. As far as I understand at least.

I guess, a Netherbrain could be seen as an eldritch being, but yes, Great Old Ones are a whole different number ( Lovecraft and eldritch horror fan here).

I would have wished to have more interactions with Auntie Ethel as a feylock. You should have been able to see through her disguises sooner for example. A fiendlock should be able to readthe infernal on Astarions back ( hell, Well and Karlach should be able to do that) You get so much bonuses for other classes to solve a situation, but warlock has not much, not even a conversation with their patron or something like that.

Well, I guess you are right, but they have very similar aesthetic and theme in my opinion. Mindflayers have tentacles, GOO warlock has a spell for tentacles, both have a focus around psychic damage and mind control, etc.
