I tried to play on difficult mode but i saw that boss type enemies (BTE) are way too boosted compared with normal enemies!!! I.e. in the catacombs under aleroth bosses are so strong to kill you with one hit, if you are lucky with two.
The strange thing is that the first timei played on hard difficulty that enemies was stronger but not stronger like the next time i tried. I thought there was a random BTE boost every time you began a new game but retrying more and more times I can say that BTE are boosted too much.

Is there a way to lower the enemy boost? With an editor maybe?

Were you playing different character types? That could account for the change in how hard the boss monsters were between games. Different stat distributions or better/worse equipment drops could also be a factor.

differences between classes (minor spoilers)

The patch weakened the boss monsters in easy difficulty mode, but I don't think it did anything to hard.
Some re-release versions of the game may already be updated to the latest 1.0034A version, as shown in the bottom right corner of the main menu, so would not need to be patched. The DVD version is already updated, and the patch (designed for the CD version) should not be installed.

There are various techniques you can use against strong opponents.

You can also leave Aleroth and level up a bit in the surrounding areas first (east, west and north of town would be easier than going too far south). Just don't forget about the catacombs, or get doing too many main plot quests before returning to finish off the catacombs.

You can not lower the boss strength, but you can increase your characters level, skills or stats using iZakaroN's SaveEditor (or from Kiya's site, with description). If you just want a temporary boost, you could use DAD's item editor on a weapon (etc) to use as required for boss fights.

Even on medium the boss characters in the catacombs usually almost killed me with 1 or 2 hits, though I always play as a battle mage. Meteorstrike pew pew!
