I had the same problem for a while. For one, stick to the area around the village (don't go past the area where Talana turns u into a dragon knight) for awhile. There is plenty of stuff to kill that's around Lvl 5-8 in this area. Clearing out the scattered dungeons full of undead and goblins will level you pretty quick, as will turning in simple quests. If you really need XP, take the extra XP when you are choosing a quest reward, unless the other rewards offer something you really want or need. Run the quest for Richard in town to hunt goblins, so that as you kill each one, collect their hearts (doesn't always drop) and turn them in to him for about 50 gold apiece. Use that to keep your potions and other gear up to par. Beyond that, try to come up with strategies and tactics that keep you away from the heavy hitters while taking down the weaker foes. Use your jump and roll moves to keep the ranged and magic wielders off you, and to evade strong melee attacks. Keep going, I've had a number of these moments but with patience they will pass.

A Lvl 8 can be killed by a lvl 5, I did it but it wasn't easy. First you have to have decent gear. Use your bow/spell attacks and stay clear of it if it's a melee enemy. If its a ranged or magic enemy, close the gap quick and avoid its attacks with jump and roll tactics. Then close to melee and pummel it til it either dies or tries to run. Either way, keep on it and watch that you don't get ambushed by it's buddies. It's frustrating at times, but the XP yield for killing over your Lvl are great.

I killed a lvl11 mob with a lvl6 ranger. So anything is possible with some thinking and tactics. There is a lot terrain where you can take advantages of.
