You do not have to use the creature. At least once person said they found its pathfinding annoying, and after going back for it a couple times when it got stuck, never bothered with it again (though it can also teleport to you if you get too far ahead). If you do want a little extra help, or a diversion, you could summon a demon or ghost, assuming summoning isn't also outside your preferred character playstyle.
My first playthrough I played without my creature (on easy diffiulty), no problem. I used frequently a bow and some rangerskills

You definitely can progress without a creature, as it just might take slight more time for you to clear the mobs when without creature. Its just something to ease you during your journey only. The reasons why creature is more welcome as compare to summons are, necromantic creatures had no summon duration limit and you wont need to waste your skill points on summoning skills to strengthen it, like your summoned creature.
Yeah this time I will use my creature and see how it goes
A question: if my creature die, what happens than? Can I simply bring it back via Crystal Skull? Or must I collect new arms, legs, torso and head?

Personally, I don;t think you can, just to get by Amdusias is hard enough with your creature, he can kill you with 2 shots, 1 exploding arrow and 1 poison arrow, if he hits you with fear so you run away first it's all over, it took me a hour and a half to beat him with my creature at LV 12
