8 quickslots is a bit annoying, yes, but you cannot max too many skills anyway. But I wish there were at least 2 more slots for my items and potions. But, in a way, 8 slots add to the challenge.
About the quicksave-quickload issue, whenever you hit an autosave, just alt-tab the game (if PC) and go to the saved games folder and delete the autosave. Then whenever you press F10, or the quickload hotkey, it should automatically select last saved game. I use this method.
