There is no rush to get to Lovis' tower, despite Talana's nagging.
At level 7 I was able to use a bow to take out the level 8 skeletons at the main (locked) gate of the tower (switching to melee when they got close), with several strategic retreats to heal behind the large tree down hill. As long as you get one or two of them each attack, the next approach will be easier. After that I continued south east to clear the level 6/7 goblins, and the first couple level 9 bandits.
The bandits were too tough in large groups, so I went west of the place you meet the dragon knight, and up the northern path through the mountains (and level 6/7 goblins). Farther west I cleared partly towards the passage to Maxos temple (at level 8 or 9 I could take out the level 11 black ring members one or two at a time), then decided to leave that area and clear out the derelict tunnel (the two goblin entrances already cleared above ground). After that I finished off the skeletons around Lovis's tower. I kept exploring, though, and did a fair bit before actually entering the tower.

How do you actually get in. Both sets of doors I have found( the main entrance and back door from climbing up all the ladders ) are locked?

From the main gate you can edge around the left side and jump over to get access to part of the tower. Keep an eye out for levers to open the gates. There are a couple ledges you can jump up onto, as well. Teleport back to the tower shrine and take a look around...

I have made it all the way to Lovis' Chamber, but I'm only able to run around the perimeter. So I used Lovis' Stone and ended up getting my butt kicked by some undead and his minions? any suggestions

In Lovis' chamber, jump over the caved in section left of the entrance, turn around and examine the remains of someone who didn't quite make it through...

You could wait until you are a higher level to look into the scrying stone. Alternately, you can return it to the priest without looking into it (after which the exit door by the lake teleporter shrine will be open), but that doesn't work out very well for the priest.

What type of character are you playing? There are a couple areas near where you get teleported that you could run behind. Even if the ghost and undead follow you, they may split up a bit, and when you turn to fight you might be able to get a couple ranged attacks in before they get to you.

For a melee fighter, a level of Life Leech is handy (or more if you have the skill points to spare). Level 1 of Evade is helpful, and for summoning your creature (if you have it yet) or using the occasional spell, level 1 of Mana Leech is handy (though not a high priority early in the game, when skill points are scarce).
