Does their Sell List ever get refreshed? If so when?

Merchant inventories should be reset each time you go up a level.

I'm only just starting the game, but can tell you that the inventory of Gerard in Farglow is like the contents of chests etc: I traded with him then decided to reload my game and wow! his inventory was very different eg #1 he offered only uncommon bows but #2 he offered uncommon bows, sword and cleavers. The armour available also changed.

I had not levelled or anything in the meantime.

The content of a merchant's inventory, mineral veins, unlocked chests, etc are set when you get close enough and run the crosshairs over them. If you save before doing so you can reload repeatedly to try to get something good (with a merchant, their inventory will be reset the next time you level). I wouldn't waste too much time with this, except for maybe at the beginning of the game to get started with equipment, at chests, quests, malachite veins, or boss type opponents (save just before finishing them off), etc that always give something decent.
The contents of locked chests are determined when the chest is opened, regardless of whether you previously got close enough to examine / select it.

I managed to get Gerald to stock two +1 Melee Damage swords. They were a massive boon to starting the game. Besides that, it isn't worth it.

Merchants have pre-determined items, and also stock certain types of items besides that. The pre-set items are always the same and the merchant will always have them until you buy them, whereas randomized ones are selected every time you level, and each level-up replaces all the previous levels' random items.

Nice to read everyone play a game on their own way smile ...

offtopic oops
I DON'T like reloading at all !!
... It's boring and ... it's so boring for me ... frown .. because ...
I find it soo more fun and a real adventure to take all (stock by merchant, loot in barrels ..., quests, dialogs with NPC's, etc etc) like it is/comes and so my hero must try to bould up and survive!
I must say this way of playing give me much more satifaction, much more pleasure, much more involved IN the gameworld, much more excitement, much more ... smile !
Finally : gives more confidence for me delight

Just to say: this is my (new) style of playing a game smile

On 7th of february 2015 : I start a new adventure in the Divinity world of Original Sin,
it's a Fantastic Freaking Fabulous Funny ... it's my All Time Favorite One !
