As a dragon, I go right up to one and fire away but no damage is done. Then I go closer and die instantaneously. I must be missing something

Some of them have a big anti-dragon field around them. This field distorts light and does great damage to you in your dragon form (as you have noticed already). You can shoot the towers through the field but sometimes you can't target properly.

I have them targeted because I can see their damage bar on top.

Yes well, I've noticed this with one of the towers. I had to shoot at it from a specific angle very near the field to get some damage done.
