Is it possible to increase your Dragon Skills with your trainer like you can with your human form? Or is lvl 5 as high as it goes?

No, at least in the D2:ED section of the game level 5 is the max. There is an automatic increase in the FoV section of the game (and a couple new skills), for the one dragon section there.
