The camera movements are very jumpy and not very smooth at times - I think one of the biggest culprits is how it removes roofs from buildings when you get close, it doesn't always do it unless you get the angle just right, so it throws me off.

Played for a few hours today, and my eyes just feel SUPER tired, and I have bit of a headache - I am playing on a rig that can play the game at 100FPS on a 1440P monitor with 100MHZ, so it's not my machine that's for sure.

Any ideas?

I have exactly the same problem. I get sick from playing the game. My eyes get extremely tired, headache and no apetite! :D I think it's because the game is way to bright, and often goes from very bright to dark and foggy which just makes things worse. I get that the sunny beach must be sunny but they overdid some effects I think and it is just difficult to play for longer than 1 hour without feeling awful.

Did you go through the video options and disable some of the post processing (bloom, etc)?
In the game section you can disable the dynamic camera option, which may help for combat.

Dept of field post-processing "improvement" makes you dizzy. This effect is like a plague comparable to lens-flare madness 15 years ago.

Yes, bloom, patina, granularity, etc. those are other ways how to make game look worst. Just switch off all of those just before you start any game.

Also dynamic camera jumping is crazy. Designer plan was remove control of the camera for 90% time in combat then swings the position and angles so confuse the player so he dont noticed stupid AI. :-]
