Anyone knows if changing difficulty is possible dynamically.
For example if i feel, for example, that the game is too easy/hard on normal can i change it to hard/easy and will it take effect without the need to start the game from the beginning.

You can change the difficulty in the gamplay options, while you are playing.

Yes. Check the tooltip on the vitality in your inventory... (there is a +60/+15/-25% HP modifier for easy/normal/hard). A change of difficulty will be immediately reflected in your hit points.

What other parameters change with difficulty except for attributes?
Enemies count, actions, their attributes as well i guess?

Difficulty changes the already mentioned vitality. Also it affects chance to hit, both yours and that of your enemy

No, difficulty doesn't effect XP, or enemy count, etc.

Hard difficulty gives you a -10% chance to hit, and opponents +20%.
