How do you do damage to the thing? It's resistant to pretty much everything.

Hold down [Ctrl] and whack it with a sword.

What are you hitting it with?
For me it was immediately destroyed after one hit with a sword.

I tried a sword, but maybe I needed to kill all the stuff around it first? I snuck up to it and tried to do a "rambo"

There are multiple totems in the game. The only one you should be attacking is the one in the goblin village with the friendly goblins dancing around it.

No, you don't need to kill the goblins first, but they will go after you when you destroy the totem.
I snuck up to it too, hit it with my sword and it was instantly destroyed.
Try to see if the totem has particular resistances. I can't remember what sword I used. Maybe the totem had a weakness to whatever I was hitting it with. I can honestly not remember.
