Hi all. I just bought the game and wanted to make a character. But do the backstories of the characters matter? As in, does a knight say get different dialog options or quests or something (even a few) from say a wizzard? The backstories seem to indicate that they should, but I am not sure.

No, choosing a "class" does in no way, shape or form have influence in the dialogue options of your characters. It is just flavour.
