at some point will I be able to assign skills to party members? For example, I want Bairdotr to learn Pet Pal. Or do I have to cover them with one of my 2 created characters?

Party members gain Talent points at levels 3, 7, 11, 15, and 19.

You also probably want to only give Pet Pal to one of the Source Hunters. NPC's generally don't talk to Companions, and while I can't say for sure, there may be cases where animals talking with Companions will only give a stock "who are you? I only want to talk to your master" message.

I am making a Cleric/Paladin type main character, and my 2nd character is an Earth/Fire mage. Sort of unsure who to add after that. I have tried Madora and Bairdotr, but not the water mage or the rogue (sorry don't know their names) Thoughts on a good fit for my party? It seemed like Madora spent alot of time being sort of useless, as ranged abilities seem most effective. Thanks for any tips

Madora is actually usefull, once you have the skills to move her in the middle of the battlefield.
She can deal a whole lot of damage, and as Man at Arms has a few interesting support skills.
