I want to change the stats on the Winter Ring (from Boreas' treasure chamber) but I can't for the life of me find it anywhere.

Anyone know where all the unique non-weapons are stored, if they're even in the files at all?

Unique armor is stored in 'Armor.txt' in:

Divinity Original Sin Enhanced Edition\Data\Public\Main\Stats\Generated\Data.

But when I go into Armor.txt I can't find the entry for the Winter Ring

You probably followed the 'Shared' data path, but you need the 'Armor.txt' file in the stats folder of 'Main'. There you'll find the entry for 'ARM_UNI_HIB_WinterRing'.
