For the most part I like the varying armor styles for the different races, they definitely add something to the game that would otherwise be missing in other types of games.

However, I'd like to see a bit more personal-choice in regards to the appearance system. Whether this is through a transmog-system (make X item look like Y of the same type), or alternatively, I'd like to see 2-3 variations of each 'Racial Style' for armor. That is, there would be the current version of Elven armor as type 1, then there might be a version that has a slightly different model for type 2, etc.

The second one would definitely take a lot more time and effort to do, and probably wouldn't be very high on your list. The first solution however, would be comparatively easy to do (I think, I could be wrong), and would definitely add something new to the game.

To clarify, the first idea of a 'transmog' system, would not necessarily allow you to swap a Human Armor look for an Elven, rather it would allow you to swap say Chainmail Pants (the appearance side, not the actual item of course) for Platemail. You could include limitations, such as within class of armor (you can transmog heavy armor to heavy armor, light armor to light armor, medium armor to medium, etc. w/ no light armor to heavy armor or vice versa allowed), though I don't think this would be preferable (I'd rather have free choice).

The same would be nice to go for weapons (these should be limited by type of weapon as it impacts the animations), like I could change my level 10 bow to resemble another bow, which has a better or unique model. I could change a regular sword that has good stats, into appearance wise of another.

I wouldn't go so far as to say that this is a critical or crucial idea, just something that I think would impact my gameplay positively.

P.S.

An interesting addition to this might be tying unique model sets of armor, weapons, and whatnot (individually able to be applied per piece, not only applicable as a set), to the completion of certain in-game milestones, achievements, or beating the game.

Beating the game might reward a set of armor that is the same for all races/genders (doesn't change based on them), and it would be 'Armor of the Divine'. Beating the game as an Elf might unlock a new version of this, which has leaves growing on it (in tune with the thematic appearance of Elves), doing so as a Lizard might reward an adornment of Dragons roaring on the shoulder guards, etc.

The (base) armor would look the same throughout, but more variations would be unlocked based on what you beat the game with. The adorned versions of the armor would be equally usable by all races, so if on your first playthrough you beat it as a Lizard, and the second one you're an Elf, after reaching a certain point in Act 2, you would gain the ability to change the appearance of your armor/weapons, and you would be able to select the Lizard-themed (base armor unchanged, with stuff added on to represent Lizards, namely Dragon shoulders, a crest on the chest that has a roaring Lizard, etc.) armor even as an Elf.

Beating the game as an Origin-Story character might unlock an additional option, completing the game as Fayne would give you the Base Armor Appearance, the Undead-themed version of it, and his own variant, which would be the same as the Undead-themed, but add his face in on the breastplate instead of a generic Undead.

Can't comment much on your suggestions other than personalization. It isn't much but you can dye your armor different colors if you have to corresponding dye available.

There have been suggestions like that - however, not so detailed, as I remember. For me, personally, that would be a great improvement to the game because almost all the characters I want to play (read "roleplay") are inconsistent with most their racial armour, such as a savage Lizard.

A "give stats to a different armor for the looks" ability I would highly appreciate. For example the only elf trousers/skirt I like is the humble low tier cloth version. I would like to transfer the stats of a leather pants to it for example.
