So when I'm playing my build huntsman/scoundrel (with eventually a little polymorph in there), is it viable to switch weapons during battle or does that cost AP?
Another question is, would it be better to dual wield daggers? or use 1? I would be ideally switching between a bow & dagger(s).
my last question is, does polymorph require str. to be used? or can i use most skills without having to buff str?
My seriously last question is what talent should I consider? I love lone wolf, would it be viable? How about hothead? Opportunist?

Huntsman or Scoundrel, if you want to deal the most damage, you still need to max Warfare first because it gives you physical damage, more than adding Fin and points into weapon talent. Added together, you get really high amount of damage real fast.
Both of them use Fin while polymorph require str to scale so you will likely end up using Poly for the buffs and invisibility only.
I suggest you just go pure bow or duo knives. If you go knives, make sure you have the stealth skill.
And Lone wolf is great if you plan on playing with another companion only. The Pawn is always awesome. Huntsman will love the Pawn because it allows them to reposition until they can get the highground bonus most of the time for no AP cost. Same goes to knives for backstabbing around the enemy circle.

So if id go dual daggers, I'd need to put points into warfare for physical damage? Doesn't all melee do physical damage? If thats the case does warfare increase it?

Anything that says physical damage, from weapon to even necromancy, they get more damage with warfare.
Look at your weapon too.
Let's say Physical 20-30 Fire 5-10
It will now scale with both Warfare and Pyro.
But yeah, get tons of warfare first. 10 Warfare rush after 2 or 3 into Huntsman/scoundrel for skill unlock is the highest damage build. Add in huntsman effect or scoundrel crit for more damage afterward.
