Hey Demiurgus,
the stats are on the template. The attribute "CharacterUUID" in your .lsx origin file is the GUID of the global character used for the origin class. In case of Lohse, this would be bb932b13-8ebf-4ab4-aac0-83e6924e4295. The root template is called S_Player_Lohse and can be found in the FJ_FortJoy_Main level.
S_Player_Lohse has a Stats property called "Player_Lohse" which defines the unique Lohse stats and can be found in the Stats Editor.
TL;DR
- Select your custom origin's global template
- Assign custom stats to it on the Stats property
