Is there a thread that lists a roadmap for EA? E.G. Upcoming content to be added etc etc.

Not yet, I expect it to be addressed in the next Community Update.

Following on from this question, what's the best way to stay up to date with changes?

I foolishly threw my £50 at the game without waiting to see that it had a couple of features essential to how I really wanted play (controller and local co-op). Now it's gathering virtual dust on the shelf until this feature is added.

I don't want to miss the news of this being patched in (which is hoped to happen during Early Access) but I also don't want to check constantly and risk spoilers etc.

To follow on from my own question, what I decided to do was follow the Steam updates page (since it's not full of memes like twitter) as an rss feed using a browser rss extension (Feedbro for Firefox in my case). This already worked to tell me about the first hotfix
