You can steal a merchants entire inventory, by dragging the items to a barrel, instead of clicking steal. Sometimes they wont even notice anything at all O_O Here is a video:

True! Also you can do it with anything on the ground. Also if you can't be allowed to pickpocket, you can just go into trade and equip the item by dragging it, that will force you to drop the item on ground (through dialogue), then you can just drag it from ground (to a barrel)
