Variant human needs to be an option for human players. Only even stats matter in 5e, so having a giant array of +1s, the bonus conferred on standard humans, while seemingly impressive, is functionally useless. Add to that, there is no other benefit enjoyed by human characters. This makes playing standard human characters a mechanically unpleasant experience. In the tabletop variant humans exist and have been a staple of every 5e campaign I've played in. Variant humans get to floating +1s, a skill proficiency of their choice, and a feat. This provides them some parity with other races and makes them a more viable option. At present, vhumans are not implemented in game and this should change. Not only will this allow more mechanical build diversity, this providing with more replayability, it will also let people make human characters without feeling like they're hobbling their character and that characters playability and progression.
