It is one of those spells that would need dynamic targeting. Essentially you should be able to light candles and fireplaces from afar. Technically the spell is supposed to let you light campfires but I think that it requires kindling and stuff... which means it could justifiably ignite oil.
Some surfaces could just be cleaned (ash), others ignited, fires would be doused. If they did it right, it would be amazing (like it is in a good players hands). Essentially just make some of those cantrips like Druidcraft, Thaumaturgy, presdigitation all target the environmen and do different things based on surfaces/objects targeted.
Shape Water wouldnt really work by 5e rules but if you argue that it can pull moisure from the air into a puddle, then you can turn Shape Water into the water surface cantrip
