Is it possible? If so, I can't seem to figure out how to do it. Can anyone provide insight

There's a sorting option on the top-right-ish of the inventory screen.
A button that opens a drop down menu.

Go to your inventory, top center will have your buttons, to the right of that will be a button with "Type" next to it. The button lets you pick the sorting type.

Note that its only one-time-per-click sorting ...
Once you pick you want to sort your bags by Weight, your bags will sort by Weight and that is it ...
If you would like to keep them sorted by Weight, you would need to re-open inventory every time you want to sort it ... pick litteraly any other option, and then pick again sort by Weight ... otherwise any item added after sorting will again be unsorted.
(Quite a shame if you ask me)
