I wish I had the option of turning off Point and Click character responses. They become bloody irritating to hear the same lines over and over again after awhile, especially when my dwarf char can not have a proper dwarf voice.

There already is an option to turn them down to Occasionally or Never. Check your settings.

Larian should probably change the default from always to occasional on this one. Can't imagine anyone *not* eventually having issues with the verbal torrent.

Disagree, if you are annoyed by something, you will probably look for a way to ease your annoyance, like looking in the options menu, or maybe even making a forum thread about it, searching for a mod etc... But if you don't know something is missing, you will probably not look for it, and may miss out on something that would have heightened your experience.

If something is potentially annoying as this very thread (and a number of BG3 patch 5 streams) are testament to, then better go with the MODERATE version rather that going all out. That's just common sense. Contrary to what you claim, this will only be more true the more modular this game becomes in terms of optional settings. Arguing that inconveniencing the player is good design because it forces him/her to investigate settings to find hidden options that enhances the experience is sheer nonsense.

My wife absolutely loves this and never changed it. Some people Dislikes it, some others love it. Apparently there is something about Astarion whispering in her ear that awakens something in her :V

I just explained to you why you can't do that. You have to show people that something exists, if they don't like it they can always have it removed. If they don't know it exists, they wont look for it, Doing it your way would be a very assholeish move to the people that like having verbal companions. Arguing that it is better that a player has to look up a setting he doesn't even realize he is missing is just sheer nonsense!

Or maybe a player should be introduced to a tutorial section properly by developers especially whenever they put new things on their products instead of making their product a visual mess to understand. Is it incompetence of developers, is it because of EA, is it possessed people like you? I don't know. What I know is I bought this game to have fun like most buyers did, not to dwell into research processes to utilize it properly.

For better or worse, most gamers don't go looking through the options to see what they can and cannot do. I personally enjoy looking through and have often found settings that completely changed my experience with a game that for some reason were off by default.
As for what is left on default, that is up to the developers. Hopefully they've made it clear to their players what is and isn't possible, but they can't let the user know every little option by some really obvious popup. Those same users that don't check the options are most likely to ignore the pop-ups anyways.

Accessability is a good concept, things like this however reinforce my firm belief that there should also be a "Stop being s**t" threshold in games. If people don't think to check options to see if they can edit this sort of thing, that's entirely on their head, not Larian's.
