Left clicking on an object triggers the default option; open a letter, use a potion, pick up equipment, etc. If the default action is not to pick up, you need to drag and drop to move.
If you bring a couple bundles of straw with you, you can make a hay bed wherever you want (click on one bundle to open it, then drag and drop another bundle of straw on it), but once made on the ground it can not be moved (you can make a hay bed inside a container, though). You should also come across a portable bed in your exploration; spoiler: [color:"#3A495A"]in a house north of the cursed abbey[/color] (highlight the text to read).
