Sorry, don't know the RL time unit, but if I watched closely, I saw the enemy thawing up, hit the pause button, chose freeze again, froze, paused at once again - so not to waste precious time, ran away if the enemy was too close and then used meteorstrike again (used this for the knight, he's tough and fast).
IIRC I used about 6-10 freeze to kill the knight Seth/Serk

identify creature: At lvl 5 I saw resistances and could use my spells efficiently. In my later games I didn't use it, because I had already made a list about my favourite attacks/creatures, so I could use these 5 skill pts somewhere else.
