You're underestimating the cost of unlearning skills. The price is steep, by design.
What's more, IMHO it doesn't hurt for a warrior to be proficient with several types of weapons. When you meet a monster with a very high resistance to, for instance, slashing damage, and all your skillpoints were invested therein, what good will it do?
